A thin needle through the cork, a breath of argon, and a bottle pours without ever being opened. Flok was one of the first bars in the city to run a list this way: high-value vintages, by the glass, on an ordinary weeknight.

When it opened, that meant a 2005 Vega Sicilia Único, a candidate for Spain’s finest red, poured by the 75ml glass when it opened. The price of a round, not a holiday.

Fino to PX,
without the lecture.

The full range of sherry and Madeira, by the glass and the bottle, plus sherry cocktails: there's a Sanlúcar Sour with your name on it. Five words of Spanish are all you need.

  1. Fino

    Bone-dry, pale as straw, served as cold as the fridge will go. Start here.

  2. Manzanilla

    Fino raised by the sea at Sanlúcar. The same wine, with salt on its breath.

  3. Amontillado

    A fino that lost its blanket of flor and kept ageing. Hazelnut, amber, autumn.

  4. Oloroso

    Aged open to the air: walnut and old wood, the colour of this room’s lamplight.

  5. Pedro Ximénez

    Grapes dried in the sun until the wine pours like treacle. Pudding, in a copita.

And Madeira besides: the island wine that outlives everyone. The first reviews found “a nutty complex Bual” among the pours. Education evenings happen downstairs with a Sherry Educator, poured properly, no gatekeeping.

It's 15%, so it comes in small measures: a sipping thing, cold, with an olive. The handpull says Manchester; what comes out of it says Barcelona.

Alongside: local craft beer on cask and keg, a deep Spanish spirits shelf (Nordés, the Galician gin, among them) and a hundred-odd wines, ten whites and ten reds by the glass.

Private hire, downstairs

The vault.

This building began as a bank, latterly a gift shop. The bank's vault is still down there, and Flok kept it: lined in gold leaf, stocked minibar, a vintage hi-fi and a stack of records. Or bring your own.

It takes gatherings, meetings and fiestas, with tailored service for the evening. And no, there's no photograph of it online. Some rooms you have to come and see.

    An evening downstairs with a Sherry Educator: fino to PX, poured properly, no gatekeeping. The reason a stranger walks in a sceptic and walks out with a favourite amontillado.

    Wine tastings, food pairings, the occasional vertical. Sherry Week done seriously.

  3. In the vault

    Private tastings for a table of friends, records on the hi-fi, door closed.

The benches bleed straight into Stevenson Square: a roaring trade whenever the sun's out, and the best people-watching in the Northern Quarter with a cold fino sweating next to you.
